Roasted beet and cauliflower salad

This salad is best served fresh from the oven, but will keep for a day or two as well. Feel free to rotate the roast veggies with whatever is in season. The wide feta range in the ingredient list is a response to my cheese-loving boyfriend’s remark after I used the lower end of the scale: ‘It’s great, but it could use more feta.’

Roasted beet and cauliflower salad

Serves two

  • 4 x small beetroots
  • Olive oil
  • Sprinkling of herbs (I used fresh thyme)
  • ½ x cauliflower, cut into florets
  • 1 tsp x ground cumin
  • Salt and pepper, to taste
  • 300 g x cooked brown lentils (or use tinned, very well rinsed)
  • 1 x red onion, finely sliced
  • 85 g x green leaves (rocket or spinach works well)
  • 75-150 g x feta, to taste
  • Small bunch of parsley

Dressing

  • 1 TBSP x tahini
  • Juice of 1 x lemon
  • 3 TBSP x olive oil
  • 1 TBSP water

Instructions

Preheat the oven to 200C/180C fan. Leave the beetroots unpeeled. Wrap them in tinfoil, drizzling with olive oil and sprinkling with herbs before sealing the package, and place on a baking sheet in the oven. Roast for 60-90 minutes in total, or until easily pierced through with a fork.

When the beetroots have around 40 minutes left to go, place the cauliflower florets on a separate baking sheet. Drizzle with olive oil and sprinkle over the ground cumin. Season with salt and pepper, and cook in the oven for 40 minutes or until golden.

Meanwhile, make the dressing by whisking together the tahini, lemon juice, olive oil and water.

Once the roast vegetables are almost ready, combine the remaining salad ingredients in a large bowl, reserving some feta to garnish if desired.

Remove the cooked vegetables from the oven and open the beetroot parcel. If you want to remove the skins, wait until the beetroots are cool enough to handle. The skins will slide right off. Either way, cut them into bite-sized wedges.

Add the cooked vegetables to the bowl of other salad ingredients and pour over the dressing.

Serve with any garnishes that take your fancy – pictured is a combo of raita, a sprinkling of sumac and some pomegranate seeds. Finish with an extra drizzling of olive oil, and salt and pepper to taste.
